Monday Meals: Sole En Papillote – Easy, Impressive and Healthy

Whether you find the french term enticing or intimidating, cooking “en papillote” is easy, impressive and healthy. Pronounced ON poppy-YOTE, the term simply means “in parchment” and describes the method of cooking food in a paper or foil packet. Delicate fish is gently steamed within the packet. Liquid from the fish combines with that of vegetables and herbs to form a light, delicious sauce.

This method is sure to win you over after trying Larraine Perri’s recipe for Sole in Papillote with Tomatoes and Olives, first published in Self, June 2012. Capers and kalamata olives bring the briny tang and red pepper heats it up, just a bit. This technique begs to be experimented with, but this recipe is a fantastic place to start.
