I think it is safe to say that roasted cauliflower is here to stay. Once the crunchy space-filler on the crudités platter, cauliflower is enjoying the spotlight as the versatile, fiber-filled, anti-inflammatory superstar that it is. We have featured several inspired cauliflower dishes in the past, check out Monday Meals: Cauliflower for Cauliflower Haters. (You don’t have to hate cauliflower to love these recipes!) But we have to revisit the subject today, because we forgot something. Tacos.

The tireless cook at the Minimalist Baker developed this delicious version, Roasted Cauliflower Tacos with Spicy Chipotle Romesco Sauce.
