Monday Meals: Greek-Style Tuna Salad
This salad strikes me as the perfect weeknight summer meal. It simplifies my life in two ways: by featuring pantry staples and helping to use up all of the farmer’s market veggies that I have scooped up over the weekend. Lightly-dressed, fresh tomatoes and cucumbers form the vibrant base of this salad while canned oil-packed tuna and kalamata olives make it briny and satisfying. Tuna and olive oil are both sources of Omega-3 fatty acids. Serve it with bread as a no-fail crowd pleaser or in lettuce cups to up the fiber even more.
