Monday Meals: Acorn Squash with Kale and Sausage
Fall is here and the markets are overflowing with avalanches of beautiful squash. Take advantage of the bounty and get a quick dinner on the table with stuffed squash. This is a great opportunity to use up leftover grains, proteins and cheeses, dice it up, fill a roasted squash half and pop it under the broiler. Voilà, healthy fall dinner is served.
Squash is high in vitamin A – an important nutrient for eye health, as well as for healthy teeth, bones, soft tissue, white blood cells, immune system and mucus membranes. It also provides a good dose of your daily vitamin C and fiber.
